For baking, I follow recipes pretty strictly (minus a few tweaks of a bit more sugar and spice here and there) but for cooking, I've been more adventurous in the past 1/2 year. I usually just look at a recipe, get an idea of what the seasoning is and adjust it according to my taste and how much of the main ingredient (and other ingredients, too) I have.<br />

I made a yummy <a href="http://whiskwriterepeat.blogspot.com/2010/01/banana-bread-revisited.html">banana bread</a> with bananas that I mashed and then froze. Simple ingredients, simple instructions, and simply perfect for a reminder of the banana bread your mom used to make.<br />

And while I'm on the subject of bananas, I give you <a href="http://www.handletheheat.com/2011/09/bananas-foster-french-toast.html">bananas foster french toast</a>. Make a yummy, almost caramel sauce with the banana and put it on top of french toast? Yup. Also, I had some leftover sauce so, I decided it would be good with <a href="http://www.cookography.com/2008/crepes-are-easy">crepes</a>. It's a good choice.<br />

If your looking for a lighter, healthier choice, this easy Korean <a href="http://koreanfood.about.com/od/soupsandstews/r/kongnamulgook.htm">bean sprout soup</a> may be for you. It has been something I've made many times since coming to Korea. It's good in the summer or the winter to start to warm you up (especially since it's been (literally) freezing for the past week.<br />

Recently a friend gave me a bag of lentils and black beans. I was very excited because beans aren't really used in Korea cooking. I wanted something simple and warming. Remember? It's freezing cold, 1 degree, can't feel my hands, etc. I made these <a href="http://www.seriouseats.com/recipes/2010/09/basic-french-lentils-recipe.html">basic French lentils</a> and oh my God... I was in heaven. Even though the ingredients are anything special, the flavors when they come together are divine. In fact, after I finished one batch, I made another because I liked it so much. In other words, I highly recommend making this. Today. Now?<br />

A while ago, I wanted to make caramelized onions, but didn't feel like standing around the stove forever. Solution, <a href="http://theslowroasteditalian.blogspot.com/2011/09/caramelized-onions-in-crockpot.html">crockpot caramelized onions</a>. Now, I will tell you that these are not quite the same as the one you make on the stove, but they're not too bad. It made quite a lot for this lady, so I tried to be creative with ways to eat them up. One way I enjoyed eating them was on top of toast with a fried egg. Not too shabby, I must say!<br />
<br />
I was craving something something sweet a month or two ago (prof that it really has been too long!) and I borrowed my friend's blender to make <a href="http://weelicious.com/2009/03/16/chocolate-tofu-pudding/">chocolate tofu pudding</a>. The only difference was I used honey, not agave syrup. It's easy, fairly healthy because of the extra protein, and mostly, it got rid of my sweet tooth. Well, at least temporarily.<br />
<br />
I got a wonderful package in the mail on Wednesday. My mom had sent me some spices I had asked for (plus a lovely rosewood desk set as a congratulations on my new teaching position. Can't wait.) There are just some things that you can't get (or get easily) here in Korea. When I opened the box, I was first hit by the scent. It was a mixture of cumin, coriander, cinnamon, curry, turmeric, curry, Chinese 5 spice, and (my favorite) cardamom *swoon*.<br />
The one thing that wasn't included was garam masala. So, I was inventive. I knew that without a coffee/spice grinder, I couldn't make it like I had before. Instead, I found a <a href="http://veronicascornucopia.com/2010/05/11/easy-garam-masala/">garam masala </a>recipe using already around spices. The only change I had to make was I used milder white pepper instead of black pepper because I didn't have any. I haven't got to cook with it yet, but I'm looking forward to seeing how it works out.<br />
<br />
I usually just make stir fries for dinner with cabbage, tofu, mushrooms, and some other things. They are nothing special though, unfortunately. I wanted a change, though, and made <a href="http://www.letsdishrecipes.com/2010/09/easy-sesame-noodles.html">sesame noodles</a>. I loved the deep sesame taste and also how easy it was to make this.<br />

I found a recipe for grilled eggplant with "fried rice" but I only used the marinade for the eggplant. I love eggplant and really liked this recipe.<br />

OOooo I forgot about this one. It's a Korean noodle dish. It's spicy, full of noodles, and I made mine with extra veggie. It's called <a href="http://korean-cuisine.blogspot.com/2008/08/jjol-myun-korean-rice-noodles-wspicy.html">Jjol myun</a>. I loved it so much I shared some with a friend and she was obsessed with it. She even made me give her some of the leftovers!<br />
Side note: when it says red pepper paste, it means something called gochujang. It's obviously easy to find here (like in 7-11's. I kid you not), but if you're not in Korea, try a foreign food market maybe?<br />

Also, this was a weekend of firsts: first jimjilbang (Korean sauna), first Cherry Blossom Festival, and first norebang experience (Korean karaoke). I spent more money than I would have liked, but what can you do? A girl's got to have fun.<br />

I also had an awesome breakfast for dinner (and no it wasn't at <a href="http://www.google.com/images?client=safari&rls=en&q=Butterfinger%20Pancakes&oe=UTF-8&um=1&ie=UTF-8&source=og&sa=N&hl=en&tab=wi">Butterfinger Pancakes</a>). It was at <a href="http://www.wolfhoundpub.com/">The Wolfhound</a> in Itaewon (aka foreigner central) and it was toast, eggs, baked beans, and a fried tomato. Yum!<br />
<br />
My personal preference for eating out in Korea is Korean food, but some of my friends don't care for it, so I'm in the minority when we're deciding what to eat. Thai, anything else really, but American/English. My feeling is I can get that very easily back home (and I have to 20+ years of my life). Same with going to bars, but that doesn't always happen...<br />

I recoiled, screamed, cried, and then stomped away. Okay, maybe what really happened was I double checked the price, remarked about the high cost to my friend, and moved on in search of other food suitable for breakfast. I never actually did get around to buying a "typical" breakfast food like cereal because they are sugary and more than I would like to spend. The only 2 options that I would consider were around $7.00. Not thanks, I'll make something else on my own, and so I did.<br />
To make my breakfast I began by cooking about a cup or so of brown rice. Then I mashed up two very ripe bananas. You know, banana bread ripe. Brown peel ripe. When the rice was done, I mashed up the two bananas, added them to the rice, and stirred. The mixture was quite thick, so I added soy milk (though regular milk or any other type of milk would be just fine!) until I got it to the consistency that I wanted. And then I ate some. It makes enough for a few breakfasts, it's simple, and easy. It reminded me of rice pudding, but banana flavored. It was really tasty, healthy, you can even use leftover rice to make it even quicker!<br />

soup. Pretty much whenever, wherever... Some barley was left at my apartment by the previous teacher and I made this hearty <a href="http://twopeasandtheirpod.com/mushroom-barley-soup/">mushroom barley soup</a> (barely is <a href="http://www.whfoods.com/genpage.php?tname=foodspice&dbid=127">very healthy</a> by the way). I thoroughly enjoyed it even though I didn't have stock at the time and used soy sauce to season/salt it! I skipped the thyme and celery, too because I didn't have any. I'm not really sure about the measurements, though; I just guessed since I have no measuring cups in Korea. I did, however, recently pick up some teaspoons and tablespoons. Another change was I tossed in some cut of sweet potatoes and I didn't have button mushrooms so I used some king oyster mushrooms.<br />

breakfast. This is nothing new, but I've been using the barley (my substitute for oatmeal) and making a sort of breakfast rice pudding with it. I cook the barley then add milk, cinnamon, nutmeg, fresh ginger, and a bit of sugar and cook it a bit more. Sometimes I toss an egg in and stir like crazy and it becomes thicker. Then I devour it. I've also added banana into the mix and I think apples would be equally tasty.<br />

Two other changes I made was I used mushroom broth (how appropriate, huh?!) and flour instead of cornstarch. I did plan on eating it with pasta, but I just used rice because I bought a 5 kg bag at E-Mart, so I'm good for rice for quite some time!</div><div style="margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;"><br />

red bean. I mean, this is nothing new, but I thought I should just remind everyone. Since I've been in Korea, I've had 팥빙수, or the dessert known as <a href="http://aeriskitchen.com/2009/07/korean-summer-dessert-%ED%8C%A5%EB%B9%99%EC%88%98-potbingsu/">potbingsu</a>, which has red bean, twice and I can't wait to eat it more. Lots more. Also I have become especially obsessed with soft serve. I smell a new bad habit forming. Especailly since I can get is super easily at the 7-11 for 1,500 won (about $1.50).<br />

Before leaving, I made yummy <a href="http://www.cinnamonspiceandeverythingnice.com/2009/05/poison-apples.html#more">happle dapple oat muffins</a> and the were a throwback to fall and very enjoyable!<br />

I made <a href="http://www.cupcakeproject.com/2009/03/raw-cookie-dough-thats-safe-to-eat.html">raw cookie dough</a> again. It's so damn easy and addictive. Then I froze it thinking I would forget about it. I didn't. I did make a few small changes: there was no vanilla extract, brown sugar, or chocolate chips in my cookie dough because I don't have any. I also used oil instead of butter because... yup you guessed it: I don't have any. I made up for it my adding a lot of cinnamon and pretending it was snickerdoodle cookie dough. It did the job just fine!<br />
<br />
Go to a Korean restaurnant (or better yet, make your ow!) and be like a Korean. Eat <a href="http://www.hannaone.com/Recipe/About%20Banchan.html">banchan</a>, or the little side side dishes, and get a good idea of what Korean food is like. Personally I love it!<br />

I changed a few things, I:<br />
- used dried cranberries instead of raisins and slivered almond instead of pecans because it's what we had<br />
- added 1/2 tsp, vanilla to make it more cookie like<br />
- switched olive oil for canola oil<br />
- used whole wheat flour<br />
- tossed in about 2 Tbl of cocoa powder which I thought would go well with the raspberry jam I chose to use.<br />

These are big, by the way. About the size of a palm. I tried to ration it out to make 6 (1/2 of what the recipe should make), but I ended up with seven. You may notice that that seventh cookie is not in the picture. I'll just say that these are not only for breakfast.<br />

If you do want these sweeter (they aren't that sweet, especially since I added unsweetened cocoa powder, try doubling the honey). I like the about of sweetness, though.<br />

I also made <a href="http://cookistry.blogspot.com/2010/07/botd-buttermilk-rye-bread.html">buttermilk rye bread</a>. My changes were I did 1 cup whole wheat and 1 cup white (to replace the 1 cup bread flour), instead of buttermilk I did 1 cup plain yogurt and 1/4 milk, and I just tossed everything in the bread machine instead of taking the time and making it by hand. It came out as a really nice sandwhich bread. Not very rye-like as I had thought it might have tasted, which was fine because I made a Russian rye bread a few weeks ago (sorry, no recipe).<br />
<br />
In the spirit of fall, I made <a href="http://stickygooeycreamychewy.com/2009/11/20/roasted-butternut-squash-soup/">roasted butternut squash soup</a>. I had cooked the squash before (thinking I wold be on top of things) and didn't realize that I was supposed to roast it with garam masala and ginger on it, so instead I just tossed it in the soup when I cooked it. I didn't have whole sage leaves, so I tossed in come small dried ones as well a cooked sweet potato we had in the fridge. Also, To make it almost fat free, I just added some more chicken stock instead of cream.<br />
<br />

You could make it nut free if you leave out the PB because I don't think it made a difference. I couldn't taste it, but maybe it helps cover the bean flavor?<br />

This was perfect because I had broccoli that needed to be cooked as tofu in the (bare) fridge. Kind of a funny thing because I when I was browsing thru the cookbooks at home, I also found it in "<a href="http://www.amazon.com/Healthy-College-Cookbook-Quick-Cheap/dp/1580171265">The Healthy College Cookbook</a>."<br />

<a href="http://www.mangotomato.com/2008/12/my-first-attempt-at-making-gnocchi.html">Potato gnocchi</a> from Mango and Tomato. The potatoes were starting to grow eyes and I had to toss out a few, so I decided gnocchi would be a good way to use them/spend a Friday night. Heck yes booming social life.<br />

<a href="http://www.joythebaker.com/blog/2010/07/the-single-lady-pancake/">The single lady pancake</a> from Joy the Baker. This definitely was one <i>large</i> pancake (the size a crepe pan). I would say it serves two one pancake each. I was feeling experimental so I used yogurt + some milk instead of buttermilk and instead of sugar, I used <a href="http://www.amazon.com/KLASS-Horchata-Instant-Drink-18-6/dp/B0000GJ7D0">this horchata mix</a> I bought a few month ago and haven't been using because I don't like it so much; very sweet.<br />

And: have you heard about <a href="http://newdressaday.wordpress.com/">A New Dress a Day</a>? A woman redesigns an ugly, used dress everyday for 365 days with $365. Very neat and <span class="Apple-style-span" style="color: lime;">green</span>, too.<br />

Keeping with fashion, while I was bored and looking at <a href="http://coacdinc.com/">COACD</a> (stands for Confessions of a Casting Director, fyi, for models), I decided I really liked the resort collection from a company called <a href="http://www.unitedbamboo.com/">United Bamboo</a>. It also makes me happy to see they do sell the line here in Boston (not just in NY or CA) at <a href="http://www.shopstels.com/shop">Stels Inc</a> on Newbury Street. Not exactly in my budget, I can still look, right? : )<br />
